Braised Pork with Vermicelli is a signature dish from Northeast China, representing the region unique flavor and is considered the top dish among the Four Big Braises of Dongbei cuisine. Feel free to adjust the seasonings to your own taste.

Instructions

Purchase all the ingredients as shown in the picture.

Place the pork belly in a pot of cold water, add cooking wine and ginger slices, bring to a boil to blanch, then remove and cut into chunks. Soak the vermicelli until softened.

Heat oil in the pot, add scallion, ginger, Sichuan peppercorns, and star anise to stir-fry for aroma. Add the pork belly and stir-fry evenly, then add cooking wine, dark soy sauce, and rock sugar. Stir-fry until colored.

Pour in enough warm water to cover the pork belly, slightly more than you would for braised pork. Bring to a boil, then simmer on low for one hour. Rinse the vermicelli (do not over-soak), so it can better absorb the broth when added to the pot.
